New students to receive free cookbooks

Five thousand copies of an attractive new cookbook by University of the Sunshine Coast Nutrition and Dietetics students have been printed to make it freely available to those starting at USC in Semester 2.

The book, Shopping, Cooking & Eating to Stay Healthy on a Budget, will be launched during mid-year Orientation from Monday 20 July and made available to new and existing students.

About 900 new domestic students are expected to begin their degrees in USC’s mid-year intake, which is up 70 percent on mid-year 2008.

“From feedback so far, students are absolutely rapt in the book,” said USC Equity and Diversity officer Marjorie Blowers.

“It’s a resource to help them cook nutritious meals on a low budget with tips such as buying in bulk and freezing. This is part of our support services looking after the health and well-being of USC students.”

Dana Craven and Holly Ambrose, both in their fourth year of a Bachelor of Nutrition and Dietetics degree, said they thoroughly enjoyed researching and testing recipes as they produced the cookbook.

“We’ve carefully costed them at local supermarket prices, with tips such as using home brands and buying seasonal produce,” Dana said.

Recipes are nutritionally-based, tasty, easy to make and fully costed. They range from apricot drops to “no-pastry veggie quiche” to beef casserole with spinach.

Ms Blowers said community welfare groups and food co-ops also were interested in copies.

The cookbook and other nutrition and healthy activity programs on campus were funded by a $47,000 grant from the Commonwealth Department of Health and Ageing.
