He is also an Adjunct Research Fellow with the Law Futures Centre (Griffith Law School, Griffith University) and was previously a Lecturer of Law in the Griffith Law School (2011–2014).

Jay's main areas of research are plants, agriculture and food, with specific focus on innovation and regulation and the open-ended and contingent relationships between legal, scientific and social factors.

Currently, Jay's research focuses on:

  1. The way in which nature(s) are articulated and represented in law;
  2. Biodiversity and BioTrade; and
  3. Trade and certification marks, particularly related to agriculture, food and biodiversity.

In 2016-2018 and 2019, Jay was a Chief Investigator on the projects Precision to Decision (1) and Precision to Decision (2). These projects involved partnerships between Australia’s rural research and development corporations (RDCs), were led by CRDC, and involved other research partners such as Data 2 Decisions CRC, CSIRO, UNE and Griffith University. The collaborative Precision to Decision projects provide solutions for the use of digital technology and data in Australian agriculture.
