Dr Courtney Thompson completed a Bachelor of Nutrition Science at Queensland University of Technology (QUT) and graduated with First Class Honours from a Bachelor of Biomedical Science (Honours) (Nutrition).

Courtney’s honours thesis titled ‘Validation of a Revised General Nutrition Knowledge Questionnaire for Australia’ resulted in the development of the AUS-R NKQ, a nationally valid measure of nutrition knowledge. Courtney completed her PhD at QUT in 2022.

Her research, in which she was a recipient of the Australian Government Research Training Program Stipend Scholarship and King and Amy O’Malley Postgraduate Scholarship for, was in public health and community nutrition and focused on the development, validation and assessment of food literacy.

Courtney is a Fellow of the Higher Education Academy (FHEA) and has tutored and guest lectured across first to third year nutrition science and nutrition and dietetics units at QUT, Deakin University and Victoria University. She has presented at national and international conferences, authored peer-reviewed journal articles and has supervised vacation research, placement and honours students.

Courtney is a member of the communications portfolio and a Registered Nutritionist with the Nutrition Society of Australia. She also holds membership with the Public Health Association of Australia, World Public Health Nutrition Association and Society for Nutrition Education and Behaviour.

Currently, Courtney splits her time working as a Lecturer in Nutrition and Dietetics at the University of the Sunshine Coast and as the Director of Nutrition Research, Education and Policy for her company, NPR Consulting.
